- Mansaf is a dish of rice, lamb and a dry yogurt made into a sauce called jameed
- The lamb is cooked in jameed and the sauce, which goes along with the rice and lamb, is re-hydrated and prepared into a thick gravy to go with the lamb and rice
*Qidra*
- Qidra is spiced rice with lamb, chickpeas and garlic; it's a dish named after the large clay vessel and clay oven in which it is baked
- The rice is cooked in the vessel with chunks of meat, often lamb, a generous amount of whole, unpeeled garlic cloves, chickpeas, cardamom pods and a laundry list of spices including, but not limited, to turmeric, which gives it its distinct yellow color, cinnamon, allspice, nutmeg and cumin
